Rarebit

The rarebit mixture keeps
well in a sealed container in a refrigerator.

4 large slices white bread, 1
1/2 oz. butter, 8 kipper fillets ; 4 tomatoes,
seasoning, salt and pepper.
Ingredients for rarebit mixture :
8 oz. cheese, 1 oz. butter, a good pinch of cayenne pepper, pinch of
salt, pinch of dry mustard,
1 tablespoon beer or milk, 1 teaspoon Worcester sauce.

Toast the bread until golden
brown, spread on som of the butter and keep hot.
The rest of the butter, brush on to the kipper fillets and place them on
a piece of foil,
then cook under a hot grill for 10-15 minutes or until tender, do net
overcook.
Place the kippers on the hot toast, top with sliced and lightly seasoned
tomatoes.
to make the rarebit mixture,
blend all the ingredients together in a dish.
Spread over the tomatoes with a knife. Heat for a few minutes under the
grill until
the mixture melts.
Serve this as hot as
possible
