February 2010 : Salmon Fritters
Put the flaked salmon in a dish, add the flour, the beaten eggs and enough milk or cream to make the mixture a soft consistency like a dough. Season to taste. Have the oil very hot in a pan and drop in tablespoons of the mixture, fry until golden brown on both sides, then drain on paper and keep warm.
