Inverness Sandwiches
(Nessie Snack Pack)

cup left-over cooked, diced chicken, 2 heaped tablesp. butter, 1
heaped tablesp. grated parmesan cheese,
4 slices bread (or toast bread), 4 tablesp. olive oil.
For
the sauce : 1 tablesp. flour, 1 heaped tablesp. butter, 1 teasp.
curry paste, 1 cup warm milk.

Melt the butter for the
sauce, stir in the flour, then add the warm milk stirring all the time.
Season to taste. Add the curry paste, and the chopped chicken. Mix well
and put aside.
then melt 1 tablesp. butter and the oil in a frying pan and fry the
bread on one side only.
Take out of the pan and put the chicken mixture between the two slices,
the fried side uppermost.
Then mix the remaining butter with the cheese and sprad over the two
sandwiches, and brown under the grill.
