January 2011 :

Highland Sauce for Meat or Game

1/4 brown sauce, 2 or 3 tablesp. game or meat gravy, 1 tablesp. lemon juice,
1/2 tablesp. mushroom ketchup, 1/2 glass of port wine, fine sugar, cayennepepper.

Measure into a dish the brown sauce, two or three tablesp. of meat or game gravy, the lemon juice, 
1/2 tablesp. mushroom ketchup and 1/2 glass of port wine.
Add fine sugar, salt and cayenne pepper to taste.
Put the dish in a pan with boiling water and let it get very hot.
