plain flour (1 3/4 cup) - 1 oz rice flour (1/4 cup) - 4 oz butter (1/2
cup)- 2 oz caster sugar (1/4 cup)
Mix the
flour, rice flour and sugar together. Add the butter cut into pieces and
using the finger tips rub it in until evenly distributed, then knead the
mixture together to form a soft but not sticky dough.
Divide
the dough in half and using either an oiled and sugared shortbread mould
or just your hands shape in into two rounds. They should be about
three-quarters of an inch thick. Decorate the edges if not using the
mould, then place the rounds on greased baking trays and bake at Gas
3/325° F/160°C for about 45 minutes or until brown. Cool.
