January 2009   :   Venison Pies
 

Diced venison (about 1 lb.), salt and pepper, 1 teasp. sauce (Worcester or ketchup),
1 small minced onion, 1/2 teasp. ground nutmeg, 4 tablesp. stock.

Mix all ingredients thoroughly together.

Ingredients for the pastry : 1 lb. of flour, 1/2 lb. lard, 1/2 cup cold water, pinch of salt.

Knead everything into a firm dough. JRoll out on to a floured suface, and cut into 4 circles about 6 inch in diameter. 
Fill half the circles with the filling, damp the edges and fold over, 
crimping with a fork to secure them. Brush with alittle milk and bake 
on a baking sheet in a slow oven for about 45 minutes.
